With matcha soft-serve and craft cocktails, among other enticing choices, the Auraria Campus is about to level up its dining and social scene. Exciting new additions Ichigo Matcha, Mimi Bubble Tea and Quad Side Tavern are opening this fall, offering Metropolitan State University of Denver students, faculty members and staff members more diverse, convenient and dynamic options to eat, drink and connect right on campus.
Ichigo Matcha expands to Auraria Campus with two concepts
Also operating on Denver’s 16th Street, Ichigo Matcha is known for its matcha teas, boba drinks, soft-serve ice cream, ramen and hearty rice bowls. Ichigo Matcha is bringing its popular Japanese café concept to the Auraria Campus with two new locations, one operating as Ichigo Matcha and the other a new concept, Mimi Bubble Tea.

The cafés offer a quick and convenient option for students, faculty members and visitors alike. Dedicated order-pickup parking spots will be available at both locations, making on-the-go dining even easier.
Quad Side Tavern opens this September inside Tivoli Student Union
Coming in late September (tentatively Sept. 22), Quad Side Tavern will bring a fresh social and dining option to the Tivoli Student Union. Operated by Peak Beverage in partnership with the Auraria Campus, the tavern is designed to be a welcoming gathering space for students and faculty and staff members to meet, relax and celebrate.

- Colorado craft beers and seasonal drink menus
- Shareable plates perfect for casual meetups
- A vibrant events calendar, including trivia nights, live music and themed happy hours

Located inside the Tivoli’s historic brew space, the concept was shaped by feedback gathered during a May pop-up bar where students and faculty and staff members shared their preferences on menu items, atmosphere and more, ensuring that the space feels authentic to the campus community while celebrating the Tivoli’s historic character.
